It's not often that I get to name most of the ingredients that go into a recipe in the post title. That's right, this cookie only contains 4 ingredients! These must be the simplest cookies I've ever baked, but in this case simple is good, yummy even. They're healthy, sugar-free and vegan too! Not a bad thing after all this sugar-laden Christmas fun. They're absolutely fabulous for breakfast, I usually eat oatmeal with banana and walnut anyway, having it in cookie form is all the more convenient!

This recipe was adapted from another blog, as part of the Dutch Foodblog Swap. I really liked participating in the swap last month, so I signed up again. This month, I got to bake from Judith's blog My Food Blog. Judith keeps a Dutch blog with all types of food, from these cookies to Asian cuisine and salad recipes. A lot of variety, and everything looks delicious! This recipe was extra easy and extra healthy, plus I'm a big fan of oatmeal so I thought I'd have a go at it. Doesn't look too bad now does it?
Soft Banana, Oatmeal and Walnut Cookies
yields: 10-12 cookies
equipment: a fork and a spoon
Ingredients:
2 ripe bananas
75gr oatmeal
12 walnut halves
some cocoa powder
1. Preheat the oven to 180C/350F.
2. In a mixing bowl, mash the bananas with a fork until you reach a smooth consistency (no lumps!). Stir in the oatmeal until evenly distributed.
3. Line a baking tray with parchment paper. Scoop 10 to 12 small heaps of batter onto the parchment paper with a spoon, making sure they are well spaced apart. Flatten them slightly with the back of a spoon. Dust with cocoa powder and decorate each cookie with a walnut half.
4. Bake in the oven for 20-25 minutes or until firm and well browned. Leave to cool on a wire rack.
