Lime and Poppy Seed Muffins


I've been eating so much Asian food lately. A couple of weeks ago a Dutch supermarket promoted Asian cuisine and I got really into it. I've been cooking loads of curries, chinese food and Thai salads. All healthy ofcourse... except for these muffins, which are Asian  cuisine inspired. But they're so worth cheating on your diet for: moist inside, and crunchy on top!

Tzatziki Dip


It's that time of the month again. Don't worry, I'm not going to share any sensitive female information with you, it just means that it's time for the monthly Dutch Foodblogswap! This time 'round I got the blog Pure Foodie assigned, which didn't contain a lot of baking recipes so I went for something a little out of my comfort zone: et voilà, tzatziki dip! Great with some (spelt)bread though.. Just spreading the "bread love" here (pun intended)!

Blueberry Tear and Share Loaf





This bread is a cross between a cake and a bread really, it is so soft, fluffy and fruity. It's filled with fresh blueberries that will burst in your mouth at every bite, releasing its blueberry goodness. The loaf would be great for Easter brunch! It is a tear and share loaf after all..

Soft Snickerdoodles




Today is the first day of spring! It was really fantastic weather here today, but looks like it will be the last warm day for a while - I did enjoy soaking up the sun tremendously. And you have to say, don't these snickerdoodles look like little suns? Okay, maybe I'm stretching it a bit, but they are pretty delicious I have to say. I had never had snickerdoodles so I didn't know what to expect. I'm sure every American has fond memories of this cookie, but I was a blank slate! I found that snickerdoodles are somewhat cake-like, with a huge dose of vanilla and cinnamon for extra warmth. I guess that's where my sun analogy came from!

Rustic Walnut Triangle Bread Rolls


In the Dutch foodblogger world, there is one lady who takes the cake when it comes to baking bread, and that is Levine of "Uit de Keuken van Arden". I think that pretty much everyone who has access to internet, and who does anything with bread will have baked at least one recipe from this brilliant bread blog. I saw some raving reviews of these walnut triangle bread rolls, and I can't say the reviewers were overselling at all. These are absolutely delish, and sure to become a staple recipe for me (and pretty much the rest of bread baking Holland, I think).

Whole Wheat Apple Oatmeal Crumble Muffins



I'm all about apples lately. I'm churning out apple sauce, apple cake and now these apple oatmeal crumble muffins. I got this vegan baking book which has opened my eyes to apple sauce as a fat substitute. And since I'm watching the calories, I thought I'd try a couple of bakes with apple sauce. I was pleasantly surprised, although some recipes were more succesful than others. Apple is always a bit tricky to bake with as it is very moist, so you really have to be careful that it won't turn out all mushy. These muffins are vegan, but you can subsititute with non-vegan ingredients.
